A single ingredient covering several categories
Desiccated coconut appears across a wider range of food categories than its simple description ("dried, shredded coconut") suggests, because cut size and fat content can be adjusted for each use case.

- Bakery: cookies, cakes, and macaroons, typically with fine to medium, high-fat grades.
- Confectionery: candy bars and coatings, typically medium grade.
- Snacks and granola: coarse or flake grades for texture and visibility.
- Beverages: fine grades, sometimes low-fat, used in coconut-flavored drink bases.
- Gluten-free baking: powder or flour grades blended with other flours.
- Savory and garnish use: flakes or long-thread grades, often toasted.
Grade and moisture drive suitability more than the name "desiccated coconut" alone
